Our pans come seasoned, which means you can get straight to cooking! There's no longer any need for lengthy oven seasoning thanks to our Quenched seasoned finish. With a strong, resilient seasoning foundation, your pans are ready to be put to work in the kitchen, right out of the box!

Our Quenched seasoning is a natural seasoning that will continue to build and develop with age and use. The key to a natural non-stick surface is good fat and heat management. To get the best performance out of your pan, we recommend reading the below before getting started. There are a few tips and tricks that'll make your transition to cooking with iron as smooth as can be! There can be a small adjustment period as you get used to cooking on iron, but it's so worth it. Your health, our planet and your food will thank you for it!

Before you start cooking:

  • Rinse your new pan under some hot water, and thoroughly dry with a cloth or on the stovetop, to ensure there is no packaging or manufacturing residue left on your pans.

Your first cook:

Seasoned iron cookware is a fantastic choice for first-time cooks diving into the world of iron pans. These pans develop a natural, non-stick surface over time, making them perfect for all your cooking adventures. However, it's essential to remember that keeping your seasoned iron pan dry between uses is crucial to maintaining its integrity and preventing rust. Additionally, it's worth noting that the seasoning on your pan is more vulnerable when it's young. So, be cautious when cooking acidic foods like tomatoes or lemons, as they can affect the seasoning. With a little care and attention, your seasoned iron cookware will serve you well for many, many years to come! Though don't worry - you can't ruin these pans, if you do erode a little seasoning, follow the easy stove seasoning guide below or just cook up something naturally fatty and the pan will look after itself.

NB. Heat control is key! Our pans are highly conductive so you won't need anywhere near the amount of heat you're used to. When heating your pan, heat on low to medium, when you think your pan is hot enough, drop in your fat/oil and be guided by it. Then add your protein. Let the pan release your food before turning, as opposed to being eager to turn to quickly.

The beauty of our pans is, when cooking, you can use whatever utensil and oil you choose. A high smoke point oil is recommended for seasoning.

Remember, you're best to just keep cooking, follow these principals with each cook as you get to know your pan. Heat low to medium, once hot enough, add your oil/fat, then depending what you're cooking, you're best to turn down the heat (eggs, fish, bacon & pancakes), or turn up the heat (steak etc).

Lower your heat! 

Our pans are highly conductive, so in most cases, medium will be your new high. We recommend starting with a lower temperature before turning up the heat. With induction, you’ll rarely need to go above medium heat, and we strongly advise against using the boost setting.

NOTE: It's important to always match the size of the burner to the pan.

Blemishes & surface variations are normal

Our Quenched finish is simply real, natural seasoning - it’s not a synthetic coating. This means that it’s very common for the look of your pan to change and develop as you cook. A well-seasoned pan will be dark in colour, though often a bit patchy in reality. Don't worry about how your pan looks - when it comes to iron cookware, what’s important is how it cooks!
